Preheat oven to 425*. Combine corn meal, flour, sugar, baking powder and salt. Add
milk, egg and shortening. Beat until fairly smooth, about 1 minute. Bake in greased 8"
square pan for 20-25 minutes.
This is one recipe that was given to me by my husband's mom, Jackie, before Brian
and I were married. I will always treasure the day she and I went through her recipes and I
was given my choice of recipes to copy and make my own, some day. I look forward to
passing these recipes down to our kids.

Ingredients:
- 2 cups flour (take out 1/3 cup to sprinkle over blueberries)
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup sugar
- 1 egg, slightly beaten
- 1 cup milk
- 1/4 cup melted butter
- 1 cup blueberries
Instructions:
Stir ingredients until moistened. Add blueberries. Spray muffin cups with cooking
spray. Do not use papers, as muffins bake into them. Fill cups 2/3 cups full. Bake at 375*
for 15-20 minutes or until tops are golden brown. Variations include: chocolate chips,
raisins, pecans, walnuts, dates, crumbled, cooked bacon.
This recipe was given to me by a nurse I used to work with years ago. Her muffins
were always so good!
