Homemade Bread

Ingredients:

  • 5 pounds flour
  • 1 stick (1/2 cup) margarine
  • 2 cups nonfat dry milk
  • 6 cups hot water
  • 2 eggs
  • 2 pkg. fast-acting yeast (Red Star)
  • 1 TBSP. salt
  • 1/2 cup sugar

Instructions:

Place saucepan with hot water into oven. In small bowl, put yeast, 1/2 cup hot water and 1/2 tsp. sugar. Stir; set aside. In large bowl, melt margarine, add milk, sugar, eggs, salt and remaining 5 1/2 cups hot water. Mix it into a soupy mixture. Add yeast mixture. Dump 5 pounds flour into this. Mix well and knead on well-floured surface for no less than 10 minutes, until dough is elastic (top springs back when touched). Spray pan or big bowl with non-stick cooking spray. Place dough into bowl. Cover with towel-place in oven, 1 hour. Dough will rise. Divide into six portions. Make rolls or bread. Do not roll out this dough. (Bake in greased pans.) Let rise again, 1/2 hour-45 minutes. Bake at 325*: Rolls 20-25 minutes, Bread 40 minutes. Brush tops with a little melted margarine, when you first take them out of the oven.

Corn Bread

Ingredients:

  • 1 cup corn meal
  • 1 cup flour
  • 1/4 cup sugar
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup milk
  • 1 egg
  • 1/4 cup vegetable shortening

Instructions:

Preheat oven to 425*. Combine corn meal, flour, sugar, baking powder and salt. Add milk, egg and shortening. Beat until fairly smooth, about 1 minute. Bake in greased 8" square pan for 20-25 minutes.

This is one recipe that was given to me by my husband's mom, Jackie, before Brian and I were married. I will always treasure the day she and I went through her recipes and I was given my choice of recipes to copy and make my own, some day. I look forward to passing these recipes down to our kids.

Blueberry Muffins

Ingredients:

  • 2 cups flour (take out 1/3 cup to sprinkle over blueberries)
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup sugar
  • 1 egg, slightly beaten
  • 1 cup milk
  • 1/4 cup melted butter
  • 1 cup blueberries

Instructions:

Stir ingredients until moistened. Add blueberries. Spray muffin cups with cooking spray. Do not use papers, as muffins bake into them. Fill cups 2/3 cups full. Bake at 375* for 15-20 minutes or until tops are golden brown. Variations include: chocolate chips, raisins, pecans, walnuts, dates, crumbled, cooked bacon.

This recipe was given to me by a nurse I used to work with years ago. Her muffins were always so good!

Banana Nut Bread

Ingredients:

  • 3 bananas
  • 1 cup sugar
  • 2 eggs
  • 1/4 tsp. salt
  • 3 TBSP. milk
  • 1 tsp. vanilla
  • 2 cups flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 cups nuts
  • 1/2 cup melted butter

Instructions:

Min in order given, add melted butter last. Makes 1 lg. loaf or 2 med. loaves. Bake at 350* for 45 minutes-1 hour. Check with toothpick.
