Clootie Dumpling Recipe

Ingredients

 

2 lb plain flour

2 lb raisins and currants

2 lb sugar

1 lb suet

4 teaspoons cinnamon

8 teaspoons mixed spice

2 teaspoons baking soda

cold tea

 

^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^

 

Mix all dry ingredients and then mix in the cooled tea to form a soft dough

 

Liberally flour a damp linen cloth (cloot) and place the mix in the centre

 

Loosely tie at the top, (leave 4-6 ins) between the mix and the tie to let the dumpling expand.

 

Steam for 3-4 hours, remove and dry in front of the fire to form a deliciously chewy skin.
