PAB Loaf
The title is an abbreviation of Peanut Butter, Avocado and Bacon Loaf because that was just too much of a mouthful. I know peanut butter and avocado probably sounds like a strange combination but I think it works really well.

75g oil based margarine
1 teaspoon sugar
2 eggs
1 large avocado
¼ cup peanut butter
3 rashers cooked and finely chopped bacon
¾ cup soy milk
¼ teaspoon salt
2 teaspoons mixed herbs
Pinch of pepper
2 cups flour
2 teaspoons baking powder

Melt margarine in a saucepan large enough to mix all the ingredients. Remove from heat.

Stir in sugar. Lightly beat eggs. Mash avocado and peanut butter together. Add eggs, avocado and peanut butter mixture, bacon, soy milk, salt, mixed herbs and pepper stirring to combine.

Sift flour and baking powder into saucepan mixing just to combine.

Pour mixture into a well-greased 22cm loaf tin. Bake at 180°C for about 50 minutes or until loaf springs back when lightly touched. Leave in tin for 5 minutes before turning on to a cooling rack.
