Daddy's Mince and Pasta Muffins
My Dad makes this mince and pasta dish and there is always leftovers in the fridge so this recipe was a good way of using it up in a more interesting way. Basically the recipe is just plain mince with pasta spirals but you could use just mince or just pasta. I used the rice flour for a bit of variation but you can just use two cups of regular flour if you wish.

1 cup rice flour
1 cup flour
3 teaspoons baking powder
½ teaspoon herb salt
about 200g cooked mince and/or pasta
¼ cup tomato paste
1 egg
1 soy milk
100g oil-based margarine, melted

Sift the rice flour, flour, baking powder and salt into a large bowl.

Chop the pasta pieces in half and mix the tomato paste in with the mince and pasta. In another bowl, beat the egg and soy milk together. Mix in the margarine.

Pour in the liquid ingredients and mince and pasta and fold together until the flour is just moistened. Do not overmix.

Spoon the mixture into 12 well greased muffin pans and bake at 210°C for about 15 minutes until the muffins spring back when pressed.
