Chocolate and Raisin Loaf
There was a bit of a debate other whether this was more of a cake or a loaf. The final consensus was that it was a loaf. The texture gives it away. Just be careful not to over cook it. I suggest inserting a skewer in the middle and if it comes out clean then the loaf is cooked.

125g oil based margarine
½ cup sugar
1 cup raisins
1 teaspoon baking soda
¾ cup boiling water
1 ½ cups flour
2 teaspoons baking powder
¼ cup cocoa

Place butter, sugar, raisins and baking soda in a bowl large enough to mix all the ingredients. Pour over boiling water and stir until butter and sugar melt.

Sift flour baking powder and cocoa into bowl and mix until combined.

Pour mixture into a well-greased 22cm loaf tin. Bake at 180°C for 40 to 45 minutes or until loaf springs back when lightly touched. Leave in tin for 5 minutes before turning on to a cooling rack.

Sprinkle icing sugar or spread a thin rum flavoured glaze on top if desired.
