Cheesy Kumara and Bacon Muffins
Don't despair, this doesn't use actual dairy cheese! It is yet another soy-based product you can buy at some health food stores. If you can't find a soy cheese just leave it out or substitute it for something like avocado. As a guide, 200g of cooked kumara is about 300g uncooked.

2 cups flour
3 teaspoons baking powder
½ teaspoon curry powder
½ teaspoon herb salt
1 cup grated soy cheese (I use King Land Cheddar Style Soya Cheese)
1 ¼ cups soy milk
1 egg
1 cup (200g) roughly mashed and cooked kumara
2 rashers finely chopped bacon

Sift the flour, baking powder, curry powder and salt into a large bowl. Add the grated soy cheese and toss well with a fork to mix.

In another bowl mix the soy milk and egg with a fork until blended, then stir in the roughly mashed kumara and mix again, leaving some chunky pieces.

Add the chopped bacon and the kumara mixture to the flour. Gently fold everything together until the flour is moistened. Do not overmix.

Spoon the mixture into 12 well greased muffin pans. Bake at 200°C for about 15 minutes until the muffins spring back when pressed.
