Cheesy Kumara and Bacon Muffins 2 cups flour Sift the flour, baking powder, curry powder and salt into a large bowl. Add the grated soy cheese and toss well with a fork to mix. In another bowl mix the soy milk and egg with a fork until blended, then stir in the roughly mashed kumara and mix again, leaving some chunky pieces. Add the chopped bacon and the kumara mixture to the flour. Gently fold everything together until the flour is moistened. Do not overmix. Spoon the mixture into 12 well greased muffin pans. Bake at 200°C for about 15 minutes until the muffins spring back when pressed.
