Basic Chocolate Banana Muffins
Banana and chocolate go quite well together. These muffins must taste alright because my cousin demolished three in one sitting.

2 cups flour
3 teaspoons baking powder
¼ cup cocoa
½ cup sugar
1 egg
1 cup soy milk
75g oil based margarine, melted
1 teaspoon vanilla essence
1 large ripe banana, mashed

Sift the flour, baking powder and cocoa into a large bowl. Add the sugar and mix together.

In another bowl lightly beat the egg and the soy milk together with a fork. Add the margarine, vanilla essence and mashed banana and mix to combine.

Add the wet ingredients into the flour. Gently fold everything together until the flour is moistened. Do not overmix.

Spoon the mixture into 12 well greased muffin pans. Bake at 200°C for 12 to 15 minutes until the muffins spring back when pressed.
