Comforting Avocado Mash
Serves 1
I don't know why but this meal is good at cheering me up. When we have fresh mango
around I use that instead of dried mango.
1 large avocado
1 tablespoon peanut butter
1 rasher bacon, cooked and chopped
¼ cup roasted cashews
¼ cup dried mango, chopped
Mash avocado and peanut butter together. Lightly mix in bacon, cashews and
mango.
Serve immediately.
