It symbolizes holiness, purity, beauty, grace and chastity. This was because it was thought only virgins can handle these creatures.
For you skeptics out there, unicorn horns that were sold were thought to have come from Africa, from the white rino. Another beautiful creature slain only so that the hunter could sell its horn.
