  Cook with India and explore the wide range of dishes, recipes, and traditions that revolve around food in a country where each of its 26 states have their own dishes and each cook turns those dishes into something unique. Besides this, as a cosmopolitan country,through the ages Indians have incorporated as many dishes from other cultures as we could find.
  I grew up in India,in an army family, taking all the good food I ate at every meal for granted. The cook, under my mother's supervision, did all the cooking; there were other servants who did the clean up. All we kids did is show up at the table when called for a meal, eat, and then go out and play or study.
  When I came to America, I realized the only way my children would have the dishes I'd enjoyed, was if I started doing all I had learnt in theory. My mother had insisted on some practice at home. I took cooking; both practice and theory, for my O levels, so I wasn't a complete novice; but it's taken 27 years of cooking on my own to come to the stage where I feel I have something worth sharing.
  Recent years have witnessed a great interest in Indian food abroad, both eating it and learning how to cook it. Health concerns as we get on in life, have challenged me to take traditional recipes and convert them to new ones that suit the dictates of diet restrictions and preparation time.
  The more research I do, the more I see that healthy eating is something our ancestors knew all about and that we've forgotten.
This site is a reminder to examine traditions with an open mind, not discard them either because they are old-fashioned or to prove we are smart and modern. This site is also for those who want to experiment with Indian dishes and don't know how/where to start.
  I would also like to learn more from those who want to share innovative ideas/Indian recipes that cut down on time without sacrificing taste.
  With the help of experienced cooks, I would like to gather traditional recipes here, for dishes we remember from childhood, but don't know how to make.
  Lentils being such a fundamental part of the Indian diet, we focus on them first.
