Chicken Soup

  1. Place the chicken in a large stock pot and fill with enough water to cover it.
  2. Bring to a boil and remove the foam.
  3. At this point add the onion and salt and pepper to taste.
  4. Once the chicken is boiled remove it and then add the onions to the pot.
  5. Now add the rice or orzo and then let it boil.
  6. When the rice or orzo is ready add the avgolemono. Avgolemono is a sauce that is from lemon.

Greek Salad

  • 1 head Cabbage
  • 2-3 cloves Carrots
  • Olive oil
  • Vinegar or lemon juice
  • Salt
  • Pepper
    1. Cut the cabbage in half and discard the outer tough leaves and the inner core.
    2. Cut each half into quarters and wash under cold water.
    3. Place each quarter on its side and slice very thin slices with a sharp
    4. knife. Alternately each quarter can be sliced by using a mandolin.
    5. Grate the carrots using a box grater or mandolin.
    6. Place cabbage and carrots in a bowl and dress it with salt, pepper, oil and vinegar or lemon to taste.
    7. Toss well and serve.
    8. Olives may be used as a garnish.
