Tiropitta (Cheese Pie)
CUPS INGRIDIENTS
30 sheets of phyllo (to fit pan 8" square or 7 x 11")
1 c. butter
4 eggs
2 c. (1/2 lb) feta cheese, crumbled or grated
2 c. (1 lb.) cottage cheese, small curd
2 Tab. milk
salt (optional)
Brush a baking pan with melted butter. Lay 10 sheets of phyllo on bottom of pan, brush
each sheet with melted butter as it is placed in the pan.
Beat eggs until thick and foamy. Add cheeses and beat well. Add 2 Tab. melted butter
and the milk. Add salt if desired. Beat again. Spread half of mixture over phyllo in
pan. Top with another 10 sheets, brushing each with butter. Repeat with the remaining phyllo.
Bake in a preheated moderate 350�F oven for 1 1/4 hours. Cut into squares or triangles
and serve warm.
Makes 16 pieces.
