grate the zest of two of them squeeze the juice of all

pour the juice into a bowl with the zest and sugar -stir to dissolve the sugar and add the double cream -whip everything until it holds soft peaks

turn it into a shallow, lidded, airtight container(about two litres) cover and freeze until firm(3-5hours)
