
Mint Tea
INGREDIENTS:
4 tea bags
8 fresh mint sprigs
4 cups boiling water
3/4 cup fresh lemon juice
1/4 cup orange juice
1 1/4 cups sugar, or to taste
3 cups hot water
PREPARATION:
Bring 4 cups of water to a boil. Add tea bags and mint; cover and let steep for 10 to 15 minutes. Combine remaining ingredients in a 2-quart pitcher. Remove tea bags from tea mixture; add to pitcher and stir well. Chill. Serve over ice.
Makes 2 quarts.

Slippery Run Tea
INGREDIENTS:
3 cups cranberry juice cocktail
1 cinnamon stick
Dash ground ginger
2 tsp. honey
2 tea bags
Orange rinds and cinnamon sticks for garnish
PREPARATION:
In a saucepan, heat cranberry juice, cinnamon stick, ginger and honey just to boiling. Remove from heat and add tea bags. Cover and let stand 5 minutes. Remove tea bags and cinnamon stick. Pour into mugs with orange slices and cinnamon sticks. Makes 4 servings.

Apricot Orange Tea
INGREDIENTS:
2 1/2 cups apricot nectar
1 cup orange juice
1 cup water
1 tablespoon sugar
1 teaspoon ground cinnamon
4 lemon slices
12 whole cloves
2 teaspoons instant tea
PREPARATION:
In a medium saucepan, combine apricot nectar, orange juice, water, sugar, and cinnamon. Insert 2 cloves into each lemon slice; add to the saucepan. Heat just to boiling; reduce heat. Cover and simmer for 5 minutes. Stir in instant tea. Serve hot.
Serves 4 (1 cup servings).

Southern Iced Tea
INGREDIENTS:
3 cups water
3 teaspoons (heaping) fresh orange pekoe bulk tea
4 cups cold water
PREPARATION:
Bring the water to a boil in a non aluminum saucepan. Reduce heat to low and add tea; cover and let tea simmer for 5 to 10 minutes. Strain into a large pitcher and add 4 cups cold water.

Fruit Tea
INGREDIENTS:
Tea bags for 2 gallons tea
1 1/2 quarts boiling water
2 cups sugar
1 (48-ounce) can pineapple juice
1 (12-ounce) can frozen orange juice
1 (12-ounce) can frozen lemonade
PREPARATION:
Place tea bags in bowl or pitcher. Pour boiling water over tea bags. Add sugar, stirring to dissolve. Let tea bags steep in sugar water several hours or overnight. discard tea bags. Pour tea into a large bowl. Add juices, stirring well. Pour equal amounts into two one-gallon jugs. Add water to each to fill jug. Refrigerate. Shake well before serving.
Makes 2 gallons

Tangerine Tea
INGREDIENTS:
2 cups water
1 1/2 cups tangerine juice
1/4 sugar
1/4 tsp cinnamon
1/8 tsp cloves, ground
2 tea bags
PREPARATION:
In a saucepan, heat tangerine juice, water, sugar and spices until boiling. Reduce heat and simmer until sugar is completely dissolved. Remove from heat and add tea bags. Steep for 5 minutes. Strain out tea bags and serve hot.

Mulled Pineapple Tea
INGREDIENTS:
2 cups water
2 cups pineapple juice
2 tea bags
1 tsp whole cloves
2 sticks cinnamon
1 lemon, sliced
PREPARATION:
Heat water and pineapple juice in a saucepan, until boiling. Add cloves, cinnamon, lemon slices and tea bags. Simmer for 10 minutes. Strain out spices and tea bags. Serve hot.
