HONEY CAKE
- 1/2 Cup chopped walnuts
- 3/4 Cup raisins
- 1 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 3 Cups flour
Layer the ingredients in the order given into a wide mouth 1-quart canning jar. Pack each layer in place before adding the next ingredient. Attach a gift tag with the mixing and baking directions.
COOKING DIRECTIONS:
- 1 jar Honey Cake Mix
- 1 1/4 Cups honey
- 3/4 Cup brewed coffee
- 3/4 Cup oil
- 2 teaspoons vanilla
- 3 eggs
- 1/2 Cup sugar
- 1/2 Cup honey
Preheat the oven to 350 degrees. In a saucepan, cook 1 1/4 cup honey, oil coffee and vanilla, stirring gently until well blended. Set mixture aside to cool. In a medium bowl, beat eggs and sugar on high speed until thick and pale yellow. Beat the cooled honey mixture into the eggs. Add the Honey Cake Mix and beat until well blended. Scrape batter into a greased 9 x 13 inch pan. Bake for 35 to 40 minutes. As soon as cake is removed from oven use a fork to prick holes all over the surface. Heat 1/2 cup honey and gently pour over the top allowing to seep into cake. Allow cake to cool completely before cutting.
