HEART SMART MUFFINS
- 2 Cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/8 tsp salt
- 2/3 Cup brown sugar
- 1/2 Cup raisins, currants or walnuts
Layer the ingredients in the order given into a wide mouth 1-quart canning jar. Pack each layer in place before adding the next ingredient. Attach a gift tag with the mixing and baking directions.
COOKING DIRECTIONS:
- 1 jar Heart Smart Muffin Mix
- 1 egg, slightly beaten
- 3/4 Cup buttermilk
- 1 1/2 Tbsp vegetable oil
- 3/4 Cup applesauce
- 1 tsp vanilla
- 1/2 fresh or frozen blueberries
Preheat the oven to 350 degrees. In a large bowl, combine the Heart Smart Muffin mix with the buttermilk, applesauce, egg, oil and vanilla. Stir until the mixture is just blended. Do not overmix. Spoon the batter into greased muffin tins, filling 2/3 to 3/4 full. Bake for 18 to 20 minutes, or until golden brown. Cool on a wire rack for 10 minutes before removing. Serve warm or cool completely on a wire rack.
