CORNBREAD
1 Cup yellow cornmeal
2 1/2 Cups bisquick baking mix
1/2 Cup sugar
1 Tablespoon plus 1 teaspoon baking powder
Layer the ingredients in the order given into a wide-mouth 1 quart canning jar. Pack each layer in place before adding the next ingredient. Attach a gift tag with the mixing and baking directions.
MIXING AND BAKING DIRECTIONS
1 jar Cornbread Mix
3 eggs, slightly beaten
1 1/4 Cup milk
3/4 Cup butter or margarine, softened
Preheat the oven to 350 degrees. In a large bowl, combine the Cornbread Mix with the eggs, milk and butter. Stir until the mixture is just blended. Do not overmix. Divide batter into two equal portions, pouring into greased 8 inch round baking pans. bake for 25 to 30 minutes, or until golden brown. Serve warm or cool completely on a wire rack.
