| Suki's South Texas Brisket (Beef) |
| Easier than you think to do. A great drink and cook receipe, but then most of mine are. lol Take a large Brisket and marinate in the secret sauce. Ok What is the secret sauce? You ready??? Ok since it's you I'll tell ya. Bottled Italian Dressing!! lol and you thought this was going to be hard lol Marinate the brisket in the dressing for several hours. Overnight if you are that organized. I am sorry I am not , but a few hours does it too. Get your charcoals going. After the corners are good and grey on the charcoal place the brisket on the grill and sear well on each side. This seals in the flavor. Then place brisket off to the side of the fire to where it gets the heat indirectly. Make sure you cook it fat side up. Makes for wonderful flavor. Let cook for 2 hours at least. Then wrap in foil to tenderize and cook 2 or 3 more hours (depending on the size of the brisket). When brisket is almost done take a package of tortillas (not from the dairy case those are cardboard) but from the bread aisle and slice your brisket and place it on the tortilla with some Picante Sauce. A quick Pico de Gaio (which I am sure is spelled wrong) 2 bell peppers sliced and diced 2 large tomates sliced and diced 1 large onion sliced and diced and 2 Tsp of picante mix together and put on tortilla with the brisket . VERY GOOD BEER MEAL OR WINE OR HELL ANY OLE ALCOHOL WILL DO. |
