Vegetable biriyani
Ingredients

Basmati Rice 2 cups
water 2 cups
coconut milk 11/2 cups
Onion-1 Big(chop into thin long pieces)
Diced vegetables ---carrot,beans,cauliflower,fresh peas

Grind to smooth paste
Tomato -2
coriander 1/4 cup(chopped)
bay leaves-2
cardomom-2
cinnamon-1 inch piece
cloves-2
ginger- 2 inch piece
garlic- 4 cloves
green chillies- 6 or 7 depending on the taste

Procedure

Wash the rice well and drain the water.keep it aside for 15 min
In pressure cooker  add 2 tablespoon of ghee and saute the ground masala.After the raw smell goes add onion and other vegetables and the rice.add one more spoon og ghee or oil , saute the above until rice loses it moisture.Then add the water and coconut milk and salt.Cover the lid and pressure cook.Just 2 whistles enough.You can cook this in Electric rice cooker too.

Garnish with fried cashews and coriander on top.
