Baingan Bhartha
Ingredients
Egg Plant--Big one
Onion- 1 big finely chopped
Tomato- 1 Big Finely chopped
Jeera--1 teaspoon
Turmeric-1/2 teaspoon
Chilli powder-1 teaspoon
Garam Masala-1/2 teaspoon
Coriander Powder- 1 teaspoon
Salt to taste
Lemon juice 1 tablespoon

Procedure

Make slits (one inch deep) in eggplant.apply oil on top..COver with aluminion foil and Bake in the preheated oven at 400 for 45 min to one hour.Once it's cooked allow it to cool.Remove the skin and MAsh well.
In a pan add oil (1 tablespoon)..fry the jeera..then saute the onions into golden brown.cook the tomatoes with all the dry masalas.Once it's cooked, add the mashed brinjal and simmer for 10 min and add little bit oil too..
Garnish with coriander.Add the lemon juice while serving.
Serve with rice od Roti
