Bahare Baingan
Ingredients

Brinjal - 4-5 medium sized
Ginger Garlic paste- 1 1/2 teaspoon
mustard-1/4 teaspoon
curry leaves- few
turmeric powder-1/2 teaspoon
oil and water for frying
tamarind paste - 2 teaspoons or tamarind extract thick- 1/4 cup
salt as required

grind to paste

dhania-1 tablespoon
(dry roasted)
jeera 1/2 tsp
roasted peanuts- 1 TBS
red chillies- 10
Grated fresh coconut- 2 TBS
Dry roasted sesame seeds- 1 1/2 TBS

Procedure
Wash and slice brinjals into long pieces.Soak in salted water for a few minutes.Dry up moisture by spreading over a cloth for few minutes.Deep fry in hot oil.
keep aside
Heat oil in a kadai, add mustard,ginger garlic paste, surry leaves and then ground paste.
Stir fry for few minutes .When good smell comes from the masala, mis tamarind extract.
cook with oil added inbeetween ..Add the deep fried brinjals..mix well
Serve with briyani or plain rice
