| Ingredients Indian Brinjal- medium size 3 Potato-- medium size 2 Onion-2 medium size finely chopped Tomato--one finely chopped Tamarind Paste--1 Tablespoon Groundnut - 1 tablespoon coriander seeds-1 tablespoon kaskas(poppy seeds)- 1 tablespoon chillipowder- 1 teaspoon( can be increased or decreased according to the taste) Procedure In a pan saute groundnut, coriander seeds and poppy seeds separately without any oil.cook one onion in little bit oil.Make a course paste of the above. cut the brinjal and potato into 2 inch long pieces.shallow fry the brinjal and cook the potato seperately.(you can microwave also) In the pan, add 1 tablespoon of oil, fry the onion until golden brown.then add the tomatoes..once it's cooked add chilli pwder, salt and the ground paste along with tamarind paste. Add One glass of water .Allow it to boil for 10 minutes..stir inbetween..then add the vegetables and salt to taste.simmer and cook for 10 more minutes adding a tablespoon of oil in between.. garnish with coriander.Serve with rice. |
