| Granny`s Tipsy Tart 1 � cups flour 1 cup boiling water � cup butter 1 cup sugar 2 eggs 1 � tsp baking powder 1 cup chopped walnuts or pecan � lb dates 1 tsp bicarb Pour bicarb over chopped dates. Add 1 cup boiling water. Mix with a fork. Leave to stand. Cream butter and sugar. Add 2 beaten eggs. Sift flour and baking powder together. Add flour and date mixture alternatively. Nuts go in with dates. Bake at 180* for 3- - 40 min. Syrup: 1 cup sugar, 1 cup water. Stir in pot until dissolved. Boil for 5 min. Add 1 Tbl butter. Remove from stove and add � cup brandy. Prick the tart with a sharp knife. Pour syrup over tart. Gaby`s Puffs 1 pkt vanilla instant pudding made with 1 cup milk and 1 cup cream. 1 pkt puff pastry. Defrost pastry. Don�t roll. Cut into squares. Bake on ungreased pan at 200* for 5 � 10 min. Cut open. Fill with pudding. Sift icing sugar on top. Ruth�s Prune Cake 2 eggs � cup sugar 4 oz melted butter Cream together. Add 1 cup self-raising flour. Pour into pyrex dish. Push in a lot of prune plums/apples/tinned apricots. Sprinkle sugar and cinnamon on top. Bake at 180* for 25 � 30 minutes. Doreen�s Icing 60 gr margarine 2 cups icing sugar � cup cocoa 1 tsp coffee vanilla Add a little milk or boiling water. Ruth�s Ginger Cake Sift together: 2 � cups flour � cup sugar 2 dsp ginger 2 dsp cinnamon � tsp salt 1 tsp baking powder Add: 2 eggs, 1 cup syrup, 2 tsp bicarb dissolved in 1 cup black tea. Gaby�s apple cake Mix together: 1 cup flour 1 cup sugar 2 eggs 2 heaped tsp baking powder 2 tsp vanilla � cup oil Pour 1 large tin pie apples into a dish � must cover the bottom. Mom�s Chocolate Cake 1 cup flour 3 tsp baking powder � cup oil vanilla 4 tsp cocoa 1 cup castor sugar 4 eggs � cup boiling water � tsp salt � tsp instant coffee Into a bowl sift dry ingredients with 2 tsp baking powder. Make a well. Drop in yolks, water, oil and vanilla. Then 1 tsp baking powder. Beat 10 � 12 minutes. Add stiffly beaten egg whites. Bake at 180* for 40 min then 200* for 5 min. I usually one and half times this mixture, then bake for 50 min and then 8 min. Granny�s date loaf � lb dates 6 oz butter 1 cup sugar 2 eggs 1 cup boiling water 1 tsp bicarb 3 cups self raising flour 2 tsp baking powder Sprinkle bicarb over chopped dates. Pour over boiling water. Soak for about 1 hour. Cream butter, sugar. Add eggs. Add date mixture and flour. Bake in loaf tins 50 � 55 min at 180* Joan�s Cheese Cake Biscuit base 2 cartons smooth cheese 5 Tbl sugar 2 eggs � pt cream 1 Tbl flour 1 tsp vanilla lemon juice - Beat egg whites - Beat cream - Beat yolks and sugar - Add cheese, lemon, vanilla and flour - Stir in cream and egg whites - Bake at 160* for 25 min. Joan`s fridge cheese cake (can be doubled) 250 gr smooth cottage cheese 125 marg 80 gr sugar 1 egg 1 tsp vanilla 24 tennis biscuits - Cream marg and sugar. - Fold in egg, cheese and vanilla - Line a tray with thick foil. 3 rows of tennis biscuits. Cover completely with mixture. Then 1 row of biscuits in the middle and � biscuit on either side. Cover with mixture. Put cherries all way down middle. Place hands under foil and flip up the sides into a triangle. Fold over foil. Cover in whipped cream sweetened with icing sugar and grated chocolate.
