| Glazed Lemon Squares -- Dee Erickson |
| 1 cup sifted all-purpose flour � cup powdered sugar 1/8 tsp. Salt � cup butter 1 cup granulated sugar 2 Tbsp. All-purpose flour � tsp baking powder 1/8 tsp. Salt 2 eggs, slightly beaten 2 Tbsp. Lemon juice 1 tsp. Lemon rind grated Combine 1 cup flour, powdered sugar and salt in mixing bowl. Cut in butter until mixture resembles coarse crumbs. Press into greased 8 X 8 X 2" pan. Bake at 325 degrees 15 minutes. Mix remaining ingredients, and spread over baked layer. Return to oven and bake at 325 degrees about 25 minutes. Cool. Make lemon glaze and frost. Lemon Glaze � cup powdered sugar 1 Tbsp. Melted butter 1 Tbsp. Lemon juice (you may add any leftover lemon rind, finely grated) Blend all the ingredients until smooth. Frost: cut into squares.
