Coconut Icebox Cookies -- Eleanor Rock
325 degrees; 15 minutes.

Cream:  1 Cup margarine
  1 Cup granulated sugar
  1 tsp. vanilla
Beat in :  1 egg
Blend in:  1 �  Cups grated unsweetened coconut
Combine:  1�  Cups flour
                 �  tsp. baking powder
Add to creamed mixture.
Chill until easy to handle.  Shape into rolls about 1�  inches in diameter.  Roll in grated coconut to coat outside of roll.  Wrap in waxed paper or plastic wrap and chill several hours or put in freezer.
Cut in �-inch slices and place about �  inch apart on lightly greased baking sheets.  Bake until firm and golden brown around edges.
Makes about a dozen.

Grate unsweetened coconut is available at Huckleberries on 9th and Monroe and at A & T Specialty Foods at 16th and Pines.
