| Oven-Roasted Potatoes These are quick and easy to make... for potatoes. 5 or 6 Red Potatoes (this will probably more than feed your average-sized family of four) 2 tbsp. Extra Virgin Olive Oil (enough to completely coat the potatoes -- I perfer Bertolli Lucca Gentile al Palato Extra Virgin olive oil) 1/2 tsp. Garlic Powder (little more if you really like garlic) enough Salt to bring out the taste of the garlic -- 1 to 1 1/2 tsp. 1 tsp. Parsley (for color and texture more than flavor) 1/2 tsp. Minced Onions Pepper to taste Paprika, Basil or Oregano can also be added to the potatoes depending on taste. Preheat oven to 400 degrees (or 350 if Convection or you have a particularly hot oven). Cube potatoes, rinse with water and place in large freezer bag. Add olive oil and herbs and spices to the freezer bag. Garlic Salt (although I don't perfer it) can be substituted for the garlic and salt added seperately. The given measurements are not exact because this recipe is more fly-by-night than anything else. It's really not rocket science. Seal the freezer bag and shake until potatoes are well coated. Pour out potatoes onto ungreased baking sheet or shallow pan, and even them out so that there is only a single layer of potatoes. Bake in oven for 30 minutes or until potatoes are done. Enjoy! |
