1 6-7 lb. chicken
1 cup melted butter
1 cup stuffing
1 cup uncooked popcorn salt and pepper to taste

Preheat oven to 350 degrees.

Brush chicken well with melted butter, salt and pepper.
Fill cavity with stuffing and popcorn. Place in baking pan in oven.
Listen for popping sounds......



When chicken's ass blows out the oven door and flies across the room,
chicken is done.

Air Buns
Mix 1 pkg of yeast with 1/ c warm water
And 1 tsp of   sugar 
Set aside till yeast has puffed....@ 10 minutes
While you are waiting mix
3 1/2 warm water
1/2 cup sugar
1/4 cup melted shortening
1 tsp salt
By this time
You can add the yeast to the mixture  with
1 tsp of vinegar
Then add
10 cups of flour
And then knead until elastic
Put this in a greased bowl
Cover to rise for an  hour
Punch the dough down
Make small rounded rolls
Let this now rise for 2 hours
Bake at 375 for 20-25 minutes

Fudge Cake
1 1/3 c flour
1 1/2 c sugar
2/3 c cocoa (baking cocoa)
1 1/2 tsp baking soda
1 tsp salt
1 1/2 c buttermilk
1/2 c shortening
2 eggs
1 tsp vanilla
Dump it all in a bowl mix till no lumps
Bake at 350 for around 40-45 minutes
One oblong pan or 2 rounds or squares
Add desirable frosting

Cookies
3/4 c sugar
1/4 c margarine
1/3 c evaporated milk
1/2 c choc chips
1 3/4 c oatmeal
1/4 c coconut
Combine sugar, margarine and milk
In a saucepan....boil
For 1 minute stirring
Remove from heat and add choc chips.......blend
Stir in oatmeal and coconut
Mix and cool for around 5 minutes.......
Drop round tsp full onto wax paper
Refrigerate until firm

Meat Ball Stew

Caution: Takes a bit of preparation time, but well worth the effort

3 lbs potatoes peeled (or double what you would normally make for your family )
1 1/2-2 lbs carrots pared and cut into manageable chunks
2-3 med onions quartered
1 lb frozen green peas
2-3 cans cream of mushroom soup
milk
butter or margarine
salt and pepper to taste
meatballs below (or your own recipe or the one below)

Layer all  veggies (except peas)  in large pot, potatoes first, then carrots, then onions. Cover with water and cook till fork tender. Add frozen peas, cover and let set for 10 minutes.

While veggies are cooking ,prepare the meatballs

MEATBALLS

3 lbs hamburger
2 c oatmeal (can use cracker crumbs, or bread crumbs instead)
1/4 c ketchup
1 egg
1 small diced onion
1/2 tsp crushed rosemary
1 bullion cube dissolved in 2 Tbs boiling water
1 grated small to medium carrot
1 stalk celery finely diced
1/4  c parmesan cheese

Put all ingredients into large mixing bowl and blend well. make into meat balls, small or large, doesn't matter. Brown in frying pan on all sides. Arrange meatballs in 12x3x9 (or larger) baking pan.

Deglaze frying pan dripping with UNDILUTED Cream of Mushroom Soup. Heat till boiling stirring constantly.

Separate the carrots, onions, and peas from veggies and sprinkle over meatballs. Pour hot Cream of Mushroom soup over veggies and meatballs.

Mash the potatoes, with butter or margarine,  1 tsp baking powder, and a little milk. Salt and pepper to taste.  Place heaping blobs of  mashed potatoes over meatballs and veggies.
Drizzle milk over tops of potatoes.
Bake in 350 degree oven till tips of potatoes browned.

Stove top stew

1 1/2 lbs lean hamburger
6 tbsp butter, margarine, or olive oil
1/2 medium size cabbage, sliced
2 cloves garlic, diced
1 large onion, sliced
2 stalks celery cubed
1 or 2 cans dark red kidney beans, with juice
1 large can stewed tomatoes, chopped
1 1/2 cups V8 juice (or  2 individual portion cans)
1 tsp chili powder
1 cup water
Salt & Pepper to taste

Dumplings
Use your favorite biscuit recipe, or Bisquik

Brown hamburger in 3 tbsp butter,  heavy frying pan, remove from pan. Add 3 tbsp butter, the onions, garlic, cabbage, celery. Cook till fork tender, add all remaining ingredients, EXCEPT dumplings, and simmer for 15 min. Stir.
Into hot liquid place heaping teaspoons full of dumpling dough.
Simmer uncovered, 12-15 minutes, simmer covered till dumplings are cooked through, about 10-15 minutes.

This is a great meal for camping. Prepare  vegetables and place each in a zip lock baggie.

Crowd pleaser. Serves at least 6, with generous portions.
