FRESH TOMATO SALSA
2 large fresh tomatoes (Substitute = 1 can of diced tomatoes) 1 chopped jalapeno pepper, seeds removed (Substitute = 4oz. can of green chili peppers) 1 small finely chopped onion (Red, white or yellow onion) The juice from one whole lemon or (Substitute = 1 tablespoon of lemon juice) 1 level teaspoon of sugar Salt to taste Rinse fresh tomatoes under cold water and pat dry with paper towels. Remove stem and seeds. Chop the tomatoes into small pieces or open the can of tomatoes and drain off the liquid. Chop the can tomato pieces even smaller than they came if necessary. Rinse the fresh jalapeno pepper under cold water and dry with paper towels. Remove stem and seeds. Chop the jalapeno pepper into tiny pieces or open the can of green chili peppers, drain off liquid and remove any seeds. Chop the peppers if necessary. Peel the small onion and finely chop. Mix all of the chopped ingredients together very well and then add the lemon juice and sugar. Swirl the ingredients together a few times with a spoon and then lightly add the salt. Stir a few times and then allow the salsa to sit undisturbed for 15 to 20 minutes before serving to allow the flavor to soak in. Note�canned ingredients can be used when absolutely necessary.
