SWEET POTATO PIE RECIPE
6 large sweet potatoes 1 and � cups of margarine 2 cups of sugar 1 and � teaspoons of vanilla flavoring 1 teaspoon of nutmeg 1 teaspoon of ground cinnamon 3 eggs, beaten � teaspoon of salt 2 unbaked piecrusts Preheat oven to 350 degrees Rinse sweet potatoes under cold water and place them in a large pot of water (Do not cut or peel). Boil the sweet potatoes until tender. Drain the water from the pot when the sweet potatoes are through cooking. Remove the skin from the sweet potatoes while they are still hot and place them into a large bowl. Take a knife and cut them into pieces as they sit in the bowl. Add margarine and sugar to the bowl of sweet potatoes. Add the beaten eggs and spices. Smash and blend all of the ingredients together well. Pour the ingredients into 2 unbaked pie crusts and place the sweet potato pies onto a large cookie sheet, if available, to insure even cooking. Wrap aluminum foil around the outer edges of the piecrust, to prevent the crust from possibly overcooking. Bake at 350 degrees for approximately 45-50 minutes or until brown.
