SMOKED MULLET DIP
One fresh smoked mullet fish (1-pound) 1-2 freshly chopped green onions, chop these very tiny (Optional, see the note below) One 8-ounce (large) package of Cream Cheese, softened (The large package) 1 small container of Sour Cream (Actually I only use about � of the container as I like my dip thicker) � cup or less of Mayonnaise (I prefer Kraft� Mayonnaise) A dash of hot sauce (Optional, about � teaspoon, use the taste test, you may want more than that) A dash of Worcestershire sauce (About 1-teaspoonful) A dash of lemon juice (About � teaspoonful, take the taste test) � teaspoon of ketchup (Optional, adds a dash of additional flavor, but mostly color) A food processor works great for this recipe but if you do not have one it is not a problem, simply mix the ingredients as directed below thoroughly by hand. Keep the dip refrigerated. Remove the skin and all bones from the smoked mullet and chop the meat. Set aside. If you are going to use green onions (Scallions) rinse them under cold water, dry them with a paper towel, cut the tips off both ends and chop the green onions very tiny. Set aside. Blend together the softened cream cheese, the sour cream, the mayonnaise, the hot sauce, the Worcestershire sauce and the ketchup. (The ketchup is optional). Mix the above ingredients together until well blended. Add in the chopped smoked mullet meat and the chopped green onions, if you�re using onions, otherwise just stir in the chopped smoke mullet at this time. Mix the ingredients together very well. Take the taste test and then add a little lemon juice at a time until the taste is very pleasing to you. Delicious served with crackers. Note�If you do not have the green onions you can substitute 1-2 teaspoons of dry onion soup mix, but I encourage you to take the taste test as you add the onion soup mix a little at a time because it is very salty. You may choose to forget adding onions all together if you don�t like onions, and the ketchup is not a necessary ingredient. Fresh Smoked Salmon can be substituted for Smoked Mullet if you cannot get Fresh Smoked Mullet. When I say fresh I am actually referring to the next best thing, Smoked Mullet found in the Fresh Seafood Department of your favorite Grocery Store. Also, I like a little stronger smoked taste so I add about 1-teaspoon of liquid smoke to my dip and stir it in very well.
