Egg On Toast Recipe
This is just a simple way to turn your ordinary fried egg breakfast into a bite-size change. Add just a little cooking oil to a non-sticking skillet, covering the entire bottom of the pan. Add the eggs to the pan gently. Do not allow the eggs to fall into the pan�this could cause the yolks to break. Cook the eggs over very low heat. This will also help keep the eggs from sticking to the bottom of the pan. Do not turn the eggs over until the white appears almost cooked through. If you are using a medium size skillet, cook no more than 4 eggs at a time. Carefully turn the eggs over and lightly cook them on the other side just long enough to seal the yolk in. Remove the eggs when they are done and place each egg on a single slice of buttered toast, face up. Serve the eggs as usual. The idea is for each person to cut up their egg and toast into bite size squares, as you would cut up a pancake, breaking the yolk as they cut.
