Divinity Recipe
4 cups of granulated sugar 1 cup of light corn syrup � teaspoon of salt 1 cup of water 3 egg whites 1 small package of chopped nuts 1 teaspoon of vanilla extract Add the granulated sugar, light corn syrup, salt and water to a medium-sized saucepan, blend the ingredients together and cook over medium heat until the mixture begins to boil stirring constantly. Reduce the heat if necessary to a soft boil�but bubbly. Beat the egg whites in a large bowl with an electric mixer until thick and foamy and then fold the beaten egg whites into the saucepan of sugar/corn syrup mixture, stirring fast and vigorously until completely blended. Continue cooking the divinity mixture until it reaches 250 degrees on a candy thermometer or drop a small teaspoon full of the mixture into a cup or bowl of ice water. If the droplet of divinity mixture holds its shape firmly and floats in the ice water, it is ready. Test another droplet on a saucer or piece of wax paper. If the divinity holds its shape on the saucer or wax paper it is ready. Once the mixture is ready, turn off the heat and add the vanilla extract and the chopped nuts. Blend together very well. Lay a sheet of wax paper on a cool cookie sheet or other working surface. Begin scooping divinity mixture out of the saucepan and on to the wax paper by teaspoonfuls. Allow the divinity to sit and cool completely before removing. The divinity can be dusted with powdered sugar once cooled for an added treat.
