CHOCOLATE TRUFFLES RECIPE
Chocolate Truffles Recipe
1 tablespoon of cold butter, chopped 6 tablespoons of whipping cream 1 2/3 cup of semisweet chocolate chips 1 teaspoon of vanilla flavoring � cup of your favorite topping, such as, chopped nuts, candy sprinkles, shredded coconut 1 package of mini-cupcake paper liners Place the chocolate chips into a large glass bowl. Add the butter and whipping cream to a small saucepan and simmer over low heat, stirring constantly until the chocolate is melted. Remove the whipping cream mixture from the heat and pour it into the bowl holding the chocolate chips. Very slightly stir the mixture together. Do not over stir. Just a sweep through the chocolate so to speak. Cover the bowl and let it stand undisturbed approximately 4-5 minutes. After 4-5 minutes uncover the bowl and blend the mixture together until smooth. Stir in the vanilla flavoring. Cover and place the mixture into the refrigerator for approximately 15-minutes or until the mixture is firm enough to hold its shape. Place a piece of wax paper on a large cookie sheet and then use a tablespoon to drop the chocolate truffle mixture onto the cookie sheet about an inch or more apart depending on the size of your cookie sheet. Place the cookie sheet with the truffles into the refrigerator and chill for approximately 2-hours or until set, not soft. After 2-hours, roll each truffle into a ball and then roll the truffles into your favorite topping. The chocolate will soften quickly when you are working with it so work fast. Place each finished truffle into a mini-cupcake liner and then into a large container with a cover. Serve chilled about 15-minutes before serving. Makes approximately 18 truffles.
