Maori Bread

what you need

3 thick slices of potato 7 c. flour 1 tsp sugar 1 tp salt 1 tsp bicarbonate of soda

what you do

Boil the potato slices until soft. Add 2 cups of the flour and the sugar and mix until firm. Put in a warm place for an hour to rise. Mix the potato mixture with the remaining flour, the salt and the bi-carb soda. Mix to a firm dough and knead lightly. Place the dough in a greased baking tin and bake for 1 hour.
