Sweet Yoghurt Muffins Recipe Base
what you need
3/4 c. self-raising flour
3/4 c. oat bran
1 tsp baking powder
1/4 c. brown sugar
OR equivalent of sugar substitute
pinch salt
1/2 c. plain yoghurt
1/4 c. milk
2 tbls butter, melted and cooled
1 large egg, beaten lightly
what you do
In a bowl stir together the flour, oat bran, sugar, baking powder, salt and any other dry ingredients.
In another bowl whisk together the yoghurt, milk, butter, egg and any other wet ingredients (including fruits).
Stir the yoghurt mixture into the flour mixture and stir the batter briefly until it is just combined.
Place the batter in a greased 6-cup muffin tin, dividing it evenly, and bake the muffins at 180oC for 25 minutes or until browned.
Note: Yes, I really did make up all these variations myself. They are all yummy!

1/4 tsp cinnamon
1/3 c. chopped pitted dried dates
1/3 c. walnuts, toasted lightly and chopped finely
* place extra walnuts on top before baking
sultana
1/4 tsp cinnamon
1/2 c. sultanas
* sprinkle extra sugar on top before baking
apple & sultana
1/2 tsp cinnamon
1/3 c. sultanas, soaked in black tea for 10 minutes, then drained
1 small apple, diced finely or grated
* decorate with extra sultanas before baking
pineapple & lemon
1/2 tsp nutmeg
1/2 c. crushed pineapple, drained
1 tbls lemon juice
1 tsp grated lemon rind (optional)
* Omit oat bran for lighter taste
pear & apricot
1 small pear, finely chopped
6 dried apricots, finely chopped
1/4 tsp vanilla essence
apricot & almond
6 dried apricots, finely chopped,
soaked in orange juice or apricot brandy
1/2 c. slivered almonds
1/2 tsp vanilla essence

pear & raspberry
1 small pear, finely chopped
1/4 c. raspberry jam, warmed slightly
* Omit sugar

*Use strawberry flavoured yoghurt

1/2 c. pitted canned cherries (chopped if large)
2 tbls cherry juice from can
1/2 c. toasted dessicated coconut
1/2 tsp coconut essence
cherry, pear & almond muffins
1/2 c. pitted canned cherries (chopped if large)
1/4 c. cherry juice from can - use instead of milk
1/4 c. roughly ground almonds - reduce oat bran to 1/2 c.
1 tsp vanilla essence
* Decorate with a glace cherry on top before baking
