Creamy Pumpkin Gnocchi
what you need
300g gnocchi
300g pumpkin
150g bacon
1/2 onion
1 tsp garlic
2 tbls pine nuts
1/4 c. feta cheese
1 c. cream
1 tsp basil leaves
olive oil spray
sprinkle parmesan cheese
pinch black pepper
what you do
Cut the pumpkin into 2cm cubes. Place it in a baking tin lined with bake paper, spray it with
olive oil and roast for 20 minutes in a medium oven.
Chop the bacon and onion, and fry them with the garlic until the bacon is browned. Place this
mixture in an oven-proof dish. Fry the pine nuts in a little olive oil until golden and place
them in the dish as well.
Cook the gnocchi. Add it, the pumpkin, the feta cheese, the cream, 2 tbls olive oil and the
basil leaves to the dish. Stir them together.
Bake it for 10 minutes, until it is heated through.
Serve sprinkled with a little parmesan and cracked black pepper.
