Achot (Armenian Platter Cheese)

what you need

1 c. cottage cheese 3 tbls walnuts 1/4 c. yoghurt 1 tbls dill 1 tbls parsley 1 clove of garlic 1/8 tsp salt 1/4 c. walnuts, extra

what you do

Place the cottage cheese, walnuts and yogurt in a food processor and process until smooth. Finely chop the dill and parsley, and crush the garlic. Transfer the cheese to a bowl and mix with the herbs, garlic and salt. Shape the mixture into a ball, cover, and refrigerate for 4 hours. Coarsely chop the extra walnuts and roll the cheese ball in them. Serve on a bed of lettuce, with toasted pita triangles. < recipe home << home
