New Orleans Pralines
what you need
2 c. pecan, roughly chopped
2 c. brown sugar
1 c. white sugar
1 1/4 c. cream
3/4 c. milk
1 tsp vanilla essence
what you do
Stir the sugars, cream and milk together over a medium heat, until it reaches
soft-ball stage. Remove from the heat immediately.
Whisk with electric beaters until it loses its sheen and becomes creamy and
grainy in texture. Approx. 5 minutes.
Stir in the vanilla and the nuts. Drop tablespoons full of mixture onto a tray
lined with baking paper and leave to set.
