Zippy Bean Soup
what you need
400ml beef stock
1 can (450g) black beans, rinsed and drained
1 can (450g) kidney beans, rinsed and drained
1 can (300g) condensed tomato soup
1/2 c. green chillis, chopped
1/2 c. spring onions, chopped
1 tsp Worcestershire sauce
1/4 tsp cayenne pepper
1 c. Monterey Jack or Colby cheese, grated
what you do
Combine the stock, beans, soup, chillis, onion, Worcestershire sauce and
cayenne pepper in a saucepan. Bring to the boil. Reduce the heat to low. Simmer
for 10 minutes. Serve topped with cheese.
