Mexican Cheese Dip
Thanks to my friend Nichole for this recipe. Quantities are not exact.
what you need
2 bottles (500ml) stout beer
2 c. Monterey Jack or Colby cheese, grated
1/4 c. red capsicum, finely chopped
2 tbls red onion, fintely chopped
1 tsp Mexican seasoning
tabasco sauce to taste
what you do
Place the beer in a saucepan and heat to a simmer over a low heat. Gradually
stir in handfuls of the cheese, stirring until melted after each addition.
Simmer gently for 2 minutes, stirring constantly. Add the other ingredients and
stir for a couple of minutes.
Serve warm and melty with corn chips.
