Apple Breakfast Bars

what you need

1 c. wholemeal flour 3/4 c. plain flour 2/3 c. brown sugar 1 c. dried apricots, chopped 1/2 c. raisins 1/4 c. wheat bran 1 tsp baking powder 1/2 tsp cinnamon 1/2 tsp salt 1/4 tsp nutmeg 1/4 tsp baking soda 1 apple, grated 3/4 c. plain yoghurt 1/4 c. vegetable oil 2 eggs

what you do

Mix the dry ingredients, including the apple and set aside. Whisk together the yoghurt, oil and eggs. Stir into dry ingredients until just combined. Pour the mixture into a greased square cake pan, smoothing flat. Bake in 180C oven for 35-40 minutes or until a skewer inserted in the centre comes out clean. Let cool in the pan. Cut into bars. Can be stored in airtight container for up to 3 days, or frozen for up to 1 month.
