Potato Soda Bread
what you need
2 large potatoes
2 c. flour
1 1/4 c. self-raising flour
1 tsp bicarbonate soda
1/2 tsp salt
1/2 tsp caster sugar
1 tbls butter, chopped
300ml buttermilk
1 egg, lightly beaten
what you do
Peel, boil and mash the potatoes to make 1 cup of potato mash.
Rub the butter into the dry ingredients. Set aside.
Whisk together the buttermilk and egg. Add the potato gradually and whisk to try
to eliminate as many of the lumps as possible. Make a well in the centre of the
dry ingredients and pour in the potato mixture. Mix to form a dough. Do not overmix.
Form the dough into a round 5cm thick. Score the top in a star or crosshatch
pattern. Place on a lined, floured tray, dust with flour, and bake for 45 minutes
or until a skewer inserted in the centre comes out clean. Cool slightly before
serving.
or...
Add 2 tbls rosemary, 180g pitted black olives and 1/4 c. cheese to dough.
Garnish with olives before baking.
Add 1/2 c. chopped walnuts, 2 tbls thyme and 1/4 c. cheese to dough.
Garnish with walnuts before baking.
Divide dough into rolls and bake for 25 minutes.
