Christmas Log
what you need
1 1/4 c. caster sugar
1/2 c. water
3 egg whites
300ml cream, whipped
1/4 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1 tsp honey
2 pkts chocolate ripple biscuits
decorative icing tubes in 2 or more colours
what you do
Combine the sugar and water in a small saucepan. Stir constantly over low heat
until the mixture boils ans the sugar has dissolved. Simmer, uncovered, without
stirring for 5 minutes.
Beat the egg whites until stiff peaks form. Pour the sugar mixture in a thin
stream over the egg whites, while beating. Set aside.
Stir the cinnamon, nutmeg, ginger and honey into the cream. Dip each chocolate
biscuit quickly into warm water and spread cream onto one side. Join them together
to form a log.
Spread the icing over the whole log, smoothing with a spatula. Leave to dry.
Decorate with icing tubes. Refrigerate for at least 2 hours before serving.
