Four B Chilli

what you need

2 c. dried black beans 2 bottles of stout beer 2 cans diced tomatoes 350g tomato paste 2 mild long chillis 3 Jalapeno chillis 3 Serrano chillis 5 cloves garlic 2 heads broccoli 2 onions, chopped 1 c. corn kernels 2 tbls white vinegar 1 tbls cumin 1 tbls oregano 2 tsp black pepper 1 tsp dried red chillis 1/4 c. peanut butter 1 tsp salt 1 tbls olive oil

what you do

Soak the beans in water overnight. Simmer for 1 hour with plenty of water and one of the bottles of beer. Saute the onions, garlic and chillis until soft. Add to the beans. Add the vinegar, spices and tomatoes. Simmer for 1 hour, stirring frequently. Add the corn and peanut butter, simmer for 1 hour. Keep the chilli moist by adding beer and water gradually. Drink the rest of the beer. Let the chilli sit overnight for best flavour. Serve with steamed broccoli and cheese.
