Chicken and Sausage Jambalaya
what you need
3 tbls oil
1kg chicken pieces
350g smoked sausages, chopped
2 onions, chopped
2 stalks celery, chopped
1 green capsicum, chopped
1 clove garlic, chopped
2 c. long grained rice
2 1/2 c. chicken stock
2 tsp cajun seasoning
1 1/4 tsp salt
1 c. spring onions, chopped
what you do
Brown the chicken pieces in the oil. Add the sausages and cook 3 minutes. Remove
from the pan. Saute the onions, celery, capsicum and garlic until onion is transparent.
Add all the other ingredients, including chicken and sausage. Return to the
boil and simmer for 30 minutes, stirring at 10 minute intervals. Thicken with
cornflour if necessary.
Serves 6.
or...
Add 1 tbls brown sugar to chicken during first cooking for brown jambalaya.
Add 1/4 c. paprika with other spices for red jambalaya.
Replace half of the stock with tomato juice or V8 juice.
Add chopped tomatoes along with other vegetables.
Replace chicken and sausage with seafood.
