what you need
3 tbls butter
3 tbls flour
1/2 large onion, sliced
1/2 small green capsicum, sliced
1 c. beef stock
1/2 tsp Worcestershire sauce
1/2 tsp Tabasco sauce
1/4 tsp thyme
250g beef strips, cooked
2 crusty bread rolls
what you do
Make a roux with the flour and butter, cook until it browns, about 4 minutes.
Add the onion and capsicum. Cook over medium heat, stirring constantly, about 5
minutes. Gradually stir in the beef stock.
Add the Worcestershire sauce, Tabasco and thyme. Stir constantly until the
mixture boils and thickens.
Cut a thin slice from top of each roll; scoop out soft insides.
Arrange the meat on each roll. Spoon the gravy over the meat and replace the
tops on the rolls.
