Norwegian Potato Pancakes (Lefse)
what you need
1kg potatoes
1/4 c. butter
1/4 c. milk
1 1/2 tsp salt
1 tsp sugar
1 pinch black pepper
2 1/2 c. flour
what you do
Wash, peel and boil the potatoes. Mash them thoroughly.
Whip into the potatoes the butter and milk, and a mixture of the salt, sugar,
and black pepper. Whip the potatoes until light and fluffy. Chill in the
refrigerator.
When ready, add about half of the flour to the potatoes and beat until smooth.
Beat in enough of the remaining flour to make a smooth dough, shape into a ball
and turn out onto a lightly floured surface. Form into rounds about 1/2 cm
thick and 10cm wide.
Fry in a hot, dry frying pan until golden brown. Serve cold dusted with icing sugar.
