Coconut Ice

what you need

3 c. icing sugar
2 2/3 c. dessicated coconut
2 egg whites
125g copha
1 tsp vanilla essence

what you do

In a large bowl, stir together the icing sugar and coconut.
Beat the egg whites until fluffy. Fold them and the vanilla into the sugar mix.
Melt the copha and stir it into the sugar mixture. 
Divide the mixture into two and place one half in a greased baking tin. Stir 1
or 2 drops of red food colouring into the remaining mixture to achieve a pink
colour.  Pour this on top of the white mixture and sprinkle with extra coconut.
Cool and slice into squares.
