Chicken Pontchartrain
what you need
500g chicken pieces
2 tsp Creole seasoning
1/2 c. butter
2 c. mushrooms, sliced
1 c. onions, sliced
2 tbls flour
1/4 c. chicken stock
1 c. warm milk
2 tsp salt
1/4 tsp gound black pepper
what you do
Fry the chicken and onion in oil until the chicken is cooked through.
Add the Creole seasoning and mushrooms. Saut� for 3 minutes.
In a separate pan, melt the butter, add the flour, stock, milk, salt and pepper.
Blend well. Add this mixture to the chicken and cook over medium heat until
thickened.
Serve with rice or salad.
