Across the Philippines there is a phenomena known as fiesta. In Spanish, fiesta means festival or celebration. Each individual local area has one day of the year which is their fiesta. It involves traveling to that barrio, sitting around and eating and drinking. Recently it was the Fiesta of St Joseph the Worker he is the patron saint of Tagbilaran. So that meant fiesta was celebrated across the whole city. I was in for an interesting day. It began at a work colleagues house at 10am where we proceeded to have breakfast of rice, pork, carabao done in assorted ways. One specialty of fiesta time is dugo dugo or blood, blood. It is a dish of pork intestines cut up into really small pieces and cooked blood. Very rich (disgusting) flavour which they tell me is good for arthritis!! The accompaniment to our meal was some tuba (fermented coconut juice or wine) which kicks starts the heart. Also desert was a wonderful mango float yum That was the first house. Five houses, a bar, and playing marbles with the kids later I ended up a very busog (full) and drunk man!! he he he |
